What is Sushi Catering?
I personally visit your home, office, or even a private villa,
to serve unforgettable moments through each piece of sushi—
crafted with the finest ingredients from Shikoku and the skill of a seasoned artisan.
Perfect for birthdays, celebrations, business gatherings, or surprise events,this is a live sushi experience like no other—
with selected seasonal ingredients in every exquisite bit.


Commitment
The most essential element of Edomae sushi is the shari—the sushi rice.
No matter how high-quality the fish is, if the rice isn’t perfect,
the entire balance of the sushi is lost.
Personally, I believe the ideal flavor balance of sushi is 70% shari sushi rice and 30% fish.
That’s why I cook the rice fresh on-site, in your space.
Pre-cooked rice simply cannot achieve the sushi I aim to create.
I want you to fully experience the difference in aroma, temperature, and texture that only freshly made sushi rice can offer.
Everything’s taken care of, so just relax and enjoy yourself.



About the Setup in Your Space

I have designed the “Yoshinaga Counter”—a portable sushi counter
that sits right on your dining table,
instantly transforming it into an authentic sushi counter.
I can also prepare the sushi in the kitchen
and serve each round on a large plate at your table.
Additionally, the Yoshinaga Counter can also
be set up as a free-standing unit.
About the Chef
Born in Tokyo into a family of blacksmiths dating back to the Edo period,
Having spent my student years fully immersed in ice hockey
and after gaining work experience in Japan, I moved to Canada—
Over the next 20 years, I honed my craft,
including training at a Michelin-starred Edomae sushi restaurant.
In 2023, I returned to Japan.
Now based in Kagawa prefecture—known as the "jewel of the Seto Inland Sea" and my wife's hometown—
I have launched Sushi Yoshinaga, a private sushi experience brought directly to you.
